For the third dinner in the Woodfire Cooking Series, we’ll welcome Tomos Parry. Parry is the executive chef of Brat, one of London’s most decorated new restaurants. At the age of 25, Parry moved from Cardiff, the capital of Wales, to London to work at The River Café. After stages at The Ledbury and Noma, Parry opened Kitchen Table at Bubbledogs. In 2014, Parry made a name for himself at the helm of the
Mayfair hot spot Kitty Fisher’s. In 2018, he opened Brat in London’s Shoreditch and was awarded a Michelin star in the first year. Named for the Old English slang for turbot, Brat served Cornish fish and Welsh meat prepared in the style of Spain’s Basque country— simply over wood fire grill.
